Meat glue is banned in the EU, but in the US, the FDA classifies it under GRAS (generally recognized as safe). Transglutaminase is not required to be posted on the ingredients list.

"Companies use it to bind together scraps of meat that can then be sold as handsomely portioned cuts." Really? Name one. Eh. Another article listed it's uses as primarily for stuff like chicken nuggets, fake crab meat, and that sort of thing. That I can see. I found a bunch of pics on the net but none of them really looked all that convincing. I would expect this to turn up in mostly fast food (think McRib), not most restaurants. I've watched the frankensteak video and was not impressed. It didn't cut right and just looked 'off.' Could I see this in chicken fried steak or something like that? Sure. Do I want to eat it? No, definitely not, but I'm not going to stop eating meat over it as the Daily Beast suggests. Scare tactics galore. [Link]
