At the time I was reading an excerpt from Harry Crews' 'The Biography of a Place' in which he goes into the stuff certainly a lot of our parents knew well (I know my father had the pleasure of ringing chickens' necks and I'd guess that there was a lot more he never mentioned*) and Crews' notes how 'no part of the pig went unused.' NB: My first year of law school, Crews lived two houses from us but I'd not yet become a reader.
*He was born to SC sharecroppers about the same time as Crews but a few years older, also in Korea, etc.
