There must be a vast untapped market for relatively healthy french fries, as well as other fast food. If small restaurants start using bacon grease, olive oil, coconut oil or even lard to make french fries, and salt them with sea salt instead of bleached sodium chloride and toxic silicoaluminate, they should do very well, patrons will grow healthier, and everyone wins.
I suspect that every city has at least a few small restaurants that use only fresh, natural ingredients and never lack customers, year in and year out.
